The country's top-ranked bar, barely a year old: a moody room with no back bar, just a screen washed in the colour of the current menu. Each quarter the whole list rebuilds around one colour, with savoury curveballs like Green Sticks (rum, wakame distillate, salsa verde) next to twisted classics. Come hungry — the quesabirria and siomai are part of the draw.
